Layer No-Bake Peanut Butter Brownie Bars

Hello. Chocolate & Peanut Butter is one of my favorite treats. Is there something better?

Since making my brownies and pattie peanut butter dough, I’ve been curious about how they would go together. As I predicted, they are a seriously cute couple. Look at them. Would you please look at them?!

It’s so easy to make! And so quick!

Make your brownie layer first with five ingredients. Then, make your PB layer using four ingredients. Just like you did when you were young and made mud pies outside (am I alone?) – smash one layer on top of another. Then, bang! Your hands are full of a no-bake, 2-layer PB-chocolate chocolate dream.

They are soft, tender, and not overly sweet. The chocolate layer compliments the peanut butter layer perfectly. These are great as a dessert, a snack for mid-afternoon, or a post-workout treat. I kept my in the freezer and ate the corners all day. These are perfect with ice-cold almond milk. It’s a good thing new neighbors moved into the area to share these with; otherwise, I would have eaten them all by myself.

Ingredients

BROWNIE LAYER

  • 1 cup raw walnuts
  • 1/2 cup raw almonds
  • ~1 cup dates (Medjool or deglet noor // pitted)
  • Vegans can use 1/4 cup of semisweet or chocolate chips.
  • Half a cup of unsweetened cacao or raw cacao powder
  • Sea salt, one pinch

PEANUT BUTTER LAYER

  • 1/2 cup pitted dates
  • 1/2 cup raw almonds
  • Add salt to taste if you are using unsalted peanuts.
  • Half a cup of natural peanut butter (if not salted, season to taste).

Instructions

  • In the food processor, pulse the dates until only small pieces remain. Remove dates from the processor and place them in a small dish. Pulse the walnuts, almonds, and chocolate chips into the processor until they are well combined. While the processor is still running, add small amounts of dates until you have a dough. The dough should start to form at some point. Add a few more dates (whole or pitted) if it is still too dry.
  • Then, press into an 8×8 pan lined with plastic wrap or parchment paper. It is easier to cut and remove the mixture from this pan.
  • Use your hands or spatula to press until the product is flat. Put the ice cream in the freezer.
  • Process dates until only small pieces remain. Remove dates and place them in a small bowl. Add the raw almonds and peanuts, and pulsate until only small pieces remain. Process the dates and peanut butter and put them back into the mixture. Apply a thin layer of peanut butter on top. Plastic wrap or parchment paper can be used to get the brownie layer completely flat.
  • Cut into 20 squares. Cut into 20 squares. (I prefer smaller bites, and my cut was too large // adjust the batch size if you are changing it). To keep them fresh, store them in an airtight container. They stay fresh in the freezer for several weeks.
